Cream Cheese Cherry Pie
Pastry: Buy one of Keebler's Chocolate Ready Crust. They work great with this recipe.
Filling: 1 pkg Cream Cheese (8 oz) softened 1/4 cup Sugar 1 Egg 1/2 tsp Vanilla Extract 1 can Lucky Leaf Dark Cherry Pie Filling *
Heat oven to 450 degrees.
Beat together cream cheese and 1/4 cup sugar until smooth. Gradually add eggs and vanilla. Fill Pie Crust 2/3 full. This should leave you enough to "lick" the bowl, as the old saying goes.
Place pie crust with custard into the oven and back for 10 minutes, Remove pie.
Gently top pie custard with cherry pie filling. This should fill the pie to almost overflowing. You might want to place your pie on an old backing sheet now, so as not to have any overflow end up on the bottom of your oven.
Reduce temperature of the oven to 400 degrees and continue baking for an additional 20 minutes. Great served at room temperature or cold.
